There are mainly two types of honey being sold in the market. One is the processed honey which is not very beneficial as it loses most of the beneficial nutrients during the processing. This honey is processed mainly to increase its shelf life and to make it uniform in texture and taste. Raw honey is the other type and is unprocessed honey. This honey retains all its beneficial properties.
Raw honey is sold in two different forms. One form is farm honey or the honey that is produced in bee boxes by Beekeepers. Then there is wild honey which is produced in the natural bee hives of the cliffs and trees in the forests. Wild honey gets the nectar from wild flowers in the forest. Raw wild honey is characterized by crystals with the finest texture. It appears cloudier and contains particles made of bee pollen, propels, honeycomb bits and sometimes even broken bee wing fragments. Raw honey, on the other hand, has a high antioxidant level and will naturally granulate and crystallize to a thick consistency.
Most of us are naturally attracted to buying and consuming crystal clear and clean honey. Unfiltered wild honey which looks cloudy and unappealing is not commercially available in the supermarkets.
